Somewhere between three and four yesterday afternoon, my brain went offline, and it's not come back since. I spent an hour yesterday just staring into space and twirling my chair, much to my Level 2's amusement (bastard).
Today's lunch contains dairy! Shock! Gasp!
The one thing I don't like about the laptop lunch boxes is that they're really kinda too small for me. If they'd make a double-height, two-tier set, that would really be ideal. So I'm now eyeing these ones longingly and consoling myself by trying to get more variety in lunchy food, and in trying to spread this new healthy eating to the other meals as well.
See, especially now that I'm back in the habit after a week and a half out of it, I'm noticing how much more I eat, and how much hungrier I am -- in a good way. I'm not sure if it's the lack of empty calories from skipping the sugary danish for breakfast followed by the fluffy bread for lunch, or if it's that the mostly-grazing approach leaves me satisfied until six-ish, at which point I start making supper, instead of doing so at nine, often ten, at which point I'd usually be too lazy and knackered to do much beyond make a box of mac&cheese, and then of course I'd not be hungry the next day for breakfast, and so on. That vicisou cycle is broken, and I'm getting a decent(...ish) breakfast now, followed by a snack (usually veggies) around 10:30, lunch around noon, and some fruity snack around two. I still like me my candy, but I'm not having candy and a lot of other empty calories in what's supposed to be a main meal, which means I'm not filling up on candy. If nothing else, it's a lot better for my blood sugar, as well.
So, uh, yeah. I'm getting back onto an organic fruit and veg box scheme, and trying to buy more stuff in advance, and thinking about preparing some dishes for supper (or even lunch) this weekend and freezing them for the week, and pre-cutting veggies and stuff for lunch. If anyone has any suggestions for recipes or comms I should join, I'd welcome them! (I don't eat meat, I hate bananas, and I don't like vinaigrette, but will at least try about anything else.)

Root Vegetable & Lentil Stew
Ingredients:
3 tablespoons oil
1 1/2lb mixed root veg (e.g. swede, carrot, parsnip, turnip, wee drop of potato) – diced
2 large onions – chopped
2 sticks celery – diced (I never usually put this in but it tastes nice if you’ve got some!)
6oz red lentils – washed
2 cloves garlic – crushed
8oz canned tomatoes (I usually use 1 or 2 400g tins)
1 1/4 pints unsalted stock (oxo veg stock cubes are fine)
To finish:
1 onion – peeled & chopped (you can save some of the onion from if there’s enough)
1-2 teaspoons ground coriander
1-2 teaspoons ground cumin
salt
pepper
juice of half a lemon (I usually use bottled lemon juice/Jif to taste)
chopped parsley (nice if you’ve got it)
Go!:
Heat oil in large saucepan and fry root veg, onion and celery, without browning them, for about five minutes. Add garlic and lentils and cook gently for further 4-5 minutes, stirring often. Mix in tomatoes and stock; put lid on saucepan and leave to simmer gently for about 30 minutes until all veg are tender and lentils are pale golden and soft.
Meanwhile fry the extra onion in oil for about 10 minutes then add cumin and coriander and fry for 1 or 2 minutes to draw out the flavour of the spices. Stir this mixture into the cooked lentils. Add lemon juice and seasoning. Scatter with chopped parsley before serving.

The thing about multilevel bento boxes, supposedly, is that they hold enough food, calorie wise, for a good meal.

Thanks for the links! Bento comms usually leave me a bit "meh" because a lot of it is about how things look, and also about "low-fat" for some reason, but i do like to plunder through them for ideas. :)
